This wonderful and satisfying vegetarian recipe comes straight from England!
2 frozen deep dish pie crusts (check ingredients to make
sure they are vegetarian)
1 bag frozen vegetables - approx. 1 1/2 cups
1 small chopped onion
1 tablespoon olive oil
2 cups vegetable broth
4 tablespoons cornstarch or flour
1 teaspoon each of spices such as poultry seasoning, tarragon, sage and thyme
pepper to taste
Chicken/ Meat substitute if you like, or tofu - this is optional
1. Preheat oven to 350 degrees farenheit. While oven is heating remove pie crusts from freezer and set aside.
2. Take olive oil and put in medium sized pan over medium to medium high heat.
3. Add chopped onion and cook until it starts becoming clear and browned.
4. Add frozen vegetables and 1/2 cup vegetable broth. Cover with lid and stir periodically until vegetables are thawed.
5. Put pie crusts in oven for about 15 minutes. This will make it easier to remove one crust from the pan for the top of the pie, as well as make sure the center of the crust is cooked for the bottom of the pie.
6. While vegetables are cooking and crusts are warming, make a gravy with the vegetable broth and cornstarch or flour. Do this by heating vegetable broth in a small saucepan over medium high heat.
7. Add cornstarch or flour a little at a time to the broth, stirring constantly with a spoon or whisk. Break up any clumps before adding more cornstarch or flour. As this heats it should thicken.
8. Add herbs and spices to your gravy. Use any combination you desire. Good choices are poultry seasoning, tarragon, sage and thyme. Pepper to taste. Once vegetables are done you can drain the vegetable broth used to heat the vegetables and make gravy as instructed above if you desire.
9. Add vegetables to bottom pie crust. You can also add meat substitute or tofu now if you desire, but it tastes great without it.
10. Pour gravy over the vegetables. Carefully place second crust on top and poke a few holes in it to vent steam.
11. Bake for about 45 minutes or until crust starts browning.
