Break Up Chocolate With An Oyster Knife

Most knives aren't suitable for breaking up a large block of chocolate: the blade may break if the knife isn't sufficiently sturdy. I've found that the sturdy, short blade of an oyster knife works perfectly. Hold the chocolate block firmly with one hand and the oyster knife with the other. Dig the oyster knife straight down into one corner of the chocolate. Pry away small shards of the chocolate, a little at a time.
